OLD TREE BREWERY
Old Tree Brewery is a small, Brighton-based social enterprise redefining what it means to drink sustainably. Rooted in the power of fermentation, we craft live, botanical brews using seasonal, organic, and locally foraged ingredients. From kombucha and botanical beers to sparkling elderflower wine and beet kvass, each drink is a celebration of nature’s cycles and regenerative practices.
Founded in 2014 by Tom and Nick, Old Tree began as a botanical brewery for Silo, the UK’s first zero-waste restaurant. Since then, we’ve grown into a collective focused on soil regeneration, community resilience, and forest farming. Our mission is to reconnect people with nature through delicious, ethical drinks and meaningful environmental action.
We believe in doing business differently. We pay a Living Wage, operate non-hierarchically, and support independent local supply chains. Our packaging is zero-waste, our deliveries are made via e-bike, and our operations run on 100% green energy.
At Old Tree, every sip supports a wider mission: restoring ecosystems, reducing food waste, and preserving traditional knowledge of fermentation and foraging. We’re not just brewing drinks — we’re fermenting a culture shift.

BACK2ROOTS
At Back2roots, we are passionate about reconnecting people with real food and authentic, unadulterated flavours from our homeland, Greece. As co-founder and a certified Olive Oil Sommelier, I personally curate and source every product, ensuring not only exceptional quality but also full transparency—from grove to table.
We offer a carefully selected range of certified organic products, all produced using sustainable, pesticide-free farming methods that respect nature and support local communities and cooperatives. Our stall will feature:
Our signature Organic Extra Virgin Olive Oil – made from the variety of Koroneiki and the ancient “Athinolia”, PGI Lakonia, rich in polyphenols and oleocanthal. It carries a EU-approved health claim for its antioxidant and anti-inflammatory properties.
A collection of naturally infused organic olive oils – including Chilli, Garlic, Truffle, Lemon, and Basil. No flavourings or additives—just real ingredients
Organic raw honey – harvested from wild flora by our nomadic beekeeper in Euboea. With more than 55 international awards, it's unfiltered, unheated, and bursting with natural enzymes.
Dried herbs, including Greek Mountain Tea (Sideritis scardica), known for its antioxidant and immune-boosting benefits.
Kalamata olives and olive paste – naturally fermented and packed with flavour.
Every product we bring is a tribute to nature, heritage, and health—ideal for those seeking clean, honest nourishment.

BRISTOL FUNGARIUM
Bristol Fungarium planted its mycelial roots from humble beginningson a small organic veg farm growing culinary mushrooms. Over the years, the team took a deep dive into the magnificent world of mycelium, its many practicalities and peculiarities, going on to develop the first organic certified & UK-native medicinal mushroom tinctures; handling everything from wild-foraging to spore isolation and sterile lab work, liquid mycelium cultivation, fruiting block inoculation and comprehensive triple extraction to create the cleanest, most potent and sustainable mushroom products at their Somerset mushroom farm. Today the team is pioneering research into native mushroom species and their potential therapeutic applications in collaboration with a Neuroscience PhD, spearheading projects in mycoremediation and ecology with Natural England & RHS Wisley, helping to bridge the gap between herbalism and mycology

HARUKA
I have been designing and producing clothes for twenty years. My label is called Haruka, which is named after my son. I had a shop on Glastonbury High Street for thirteen years which I have now closed to create more space at this stage in my life. Textiles and clothes are my passion. I am constantly evolving what I do and experimenting and introducing new fabrics whilst at the same time trying to keep fit, styles and colours constant so that my collections can build upon each other year after year. I use natural, sustainable fabrics and have had a slow fashion approach for the last twenty years, valuing longevity and empowered style over fleeting fashion trends and striving to produce clothes that flatter different body shapes and feel good to wear. It is important to me to make a range of sizes so my clothing is accessible.I work closely and personally with everyone involved throughout the design and production process and always pay the asking price of the producer. I work with microproducers and family businesses. I visit every year and am intimately involved in the production process from sourcing, knitting and weaving fabrics. From pattern cutting and design to the finished product. It is also me directly in contact with my customersIn a world increasingly dominated by corporate forces the way we use our purchasing power can be a revolutionary act. My vision is to be part of the solution, not the problem. I believe in quality over quantity, that less is more. For a thing to be truly beautiful, it must be useful and well-made so that it lasts and is well-loved and well-used over time. For clothing, this means a convergence of beauty, originality, thoughtful pattern cutting, versatility and durability.
It inspires me that throughout time, stories have been woven and expressed in textiles. Adornment with clothing, jewelry, and tattoos is an ancient and vital symbol both of affinity with a tribe or culture and a tool of individual self-expression and empowerment in the world. Clothing, colour, and texture matter to me. The energy imbued in things, the intention behind them, how they are sourced, produced & processed is so resonant to their power, presence, longevity and value. -
